I know, this is not really a food blog, but I just had to show you what I fixed for dinner using one of the large zucchinis that we grew. For those that don't know, my husband and I planted our first vegetable garden in early June.
I cut the zucchini in half, and scooped out the center. I mixed that pulp with spicy Italian sausage,chopped tomato and onion, garlic, oregano, and a sprinkle of bread crumbs, then stir fried it. I stuffed the sausage mixture back in the hollowed out zucchini, baked for about 25min. and topped it with mozzarella cheese the last few minutes.

ReplyDeleteStrangely I've never had zucchini. I imagine it's largely because my parents always tended to go for a certain number of vegetables and didn't really go for others.
