Well, it is Christmas morning here in the U.S. and the house is very quiet. We had one daughter and her family here for two days over the weekend, which we thoroughly enjoyed, but it is just Tom and myself this morning. Later today, we will gather at one of my sister's for a family party. We all bring something, so I thought since the house was empty ..and I had plenty of time, I would bake a cake to take. I leafed through a wonderful cookbook, The Best of Southern Living Recipes and found a carrot cake...which I love. Problem is, it had thirteen ingredients, then a glaze in addition to a cream cheese frosting. I was so happy when I finally put it in the oven...then I noticed the coconut that I had forgotten to put in. RATS!!! So I opened the oven and sprinkled coconut on the top of each pan and tried to stir it in. Grrr......I am hoping that worked. I went about making the glaze which was to simmer four minutes. When I set the timer, I accidentally turned off the oven. Me oh my...How long had it been off? I have no idea how this cake will taste, but I am taking it anyway. You think maybe I should eat the first slice..?

The elder, the more you forget. I recognize this very well... :) The cake looks really wonderful. You can always put on a table as a Christmas decoration!
